The vines are planted in the town of Villematier , about twenty kilometers north of Toulouse on a soil of gravely boulbènes on the surface and stony marl in depth.
The grape variety:
Syrah, this Côtes du Rhône grape variety , with a global vocation, finds all its expression in the north Toulouse region . According to history , the Romans would have brought this grape variety from Syracuse
Dark ruby color with purple undertones. The nose is dominated by small black fruits and spices married to the discreet characters of wood . In the mouth, the silky and melted tannins combined with ripe fruits and spices confer a unique character of the Mediterranean grape variety on the Toulouse soil .
The grapes come from plot n ° 17 . In June , this plot is carefully sorted in order to reduce yields and facilitate exposure of the bunches to the sun . Only 4 clusters per vine are left.
The grapes are picked at full maturity or even tannic over-ripeness by hand and introduced into 400-liter French oak barrels. After a month of maceration and air racking , the nectar is introduced into 225 liter barrels to be aged for 11 months . Bottling is done without filtration or fining directly from the barrels.
